Pumpkin Spice Banana Bread

Pumpkin spice is truly a treat, but if I’m being honest, I’m glad she’s only around in the fall. I think that’s partly what makes her so special. She’s here for a few months and then gone, so you better get your fill while you can.

I personally don’t like an overload of pumpkin spice flavor— I prefer a subtle pumpkin spice taste. I say that but I also immediately slathered more pumpkin spice butter on the piece I cut. Haha. And, i’d recommend you do the same. That’s why I LOVE this Pumpkin Banana Bread situation. Just the right amount of pumpkin spice flavor, this bread is gluten free, and has no refined sugar! Super simple to make and delicious to taste :)

Pumpkin Spice Banana Bread

Pumpkin Spice Banana Bread

Yield: 1 loaf
Prep Time: 15 minutes
Cook Time: 50 minutes
Total Time: 1 hour 5 minutes

Moist and delicious with the perfect amount of pumpkin spice flavor.

Ingredients

  • 2 cups almond flour
  • ¼ cup coconut flour
  • ¼ cup coconut sugar
  • 1 tsp baking soda
  • Big ol’ pinch of salt (or like ¼ - 1/2 tsp)
  • 1 C pumpkin puree
  • 2 mashed ripe bananas
  • 3 eggs whisked
  • 3 Pumpkin Spice butter bombs
  • 1 tsp vanilla extract
  • Add chocolate chips if you wanna!

Instructions

  • Preheat oven to 350.
  • Grease bread pan with butter.
  • Mash 2 ripe bananas in a medium bowl.
  • Add 1 C pumpkin puree, 3 eggs whisked, 1 tsp vanilla extract, and 3 melted and cooled Pumpkin Spice Butter Bombs. Whisk together until well combined.
  • In a separate bowl, combine 2 C almond flour, ¼ C coconut flour, ¼ C coconut sugar, 1 tsp baking soda, and salt. Whisk together until well combined.
  • Add wet to dry and mix until well combined.
  • Add chocolate chips here if you want by folding those babies in.
  • Pour batter into greased bread pan.
  • Cook for 45-55 mins depending on oven
