Gluten Free Pumpkin Spice Date Banana Bread
Listen, if Gavin loves this bread, you know it must be good. And he LOVES it. I believe he said “This is the best banana bread I’ve ever had”. I’m probably over-hyping it now, but you can be the judge of that :) I took inspiration from PALEOMG’s date banana bread, tweaked a few things, and added our Pumpkin Spice Butter Bombs. Super easy, super clean, no refined sugar, and a subtly perfect pumpkin spice flavor that will have the basic betch inside of you doing a little happy dance! Basically this is just an all-around solid banana bread loaf that you’ll wanna make at least once a week all Autumn long. Listen, if loving Pumpkin Spice flavor is wrong, I don’t wanna be right 😝

Pumpkin Spice Date Banana Bread

Ingredients
- 12 medjool dates, pitted
- 3 brown bananas
- 1/3 cup melted Pumpkin Spice Butter (3-4 Butter Bombs)
- 1 egg
- 2 teaspoons vanilla extract
- 2 cups almond flour
- 2 teaspoons baking soda
- Pinch of salt
Instructions
- Preheat oven to 350 degrees.
- Coat your bread pan with butter, coconut oil spray, etc, so it doesn’t stick to the bottom.
- Start by rehydrating your dates. Place 12 dates in a pot, cover with water and bring to a boil. Let them boil for 10ish minutes.
- While dates are rehydrating, mash your 3 bananas in a medium sized bowl.
- Add ⅓ cup melted pumpkin spice butter, 2 tablespoons vanilla extract, 1 egg, and mix. Don’t worry if it’s not super mixed, you’re gonna blend in a blender.
- Once dates have rehydrated (after 10ish mins), add to a blender with just a dash of the date water. An easy way to do this is by scooping water into a ¼ measuring cup.
- Blend dates until smooth.
- In another medium sized bowl, combine dry ingredients— 2 cups almond flour, 2 teaspoons baking soda, pinch of salt. Whisk lightly breaking up any chunks of the almond flour.
- Add your wet ingredients to the blender with dates and blend until smooth.
- Add wet ingredients to dry ingredients and mix together.
- Pour into the pan and bake for 55 minutes - an hour and 10 minutes depending on your oven.
- You can tell your loaf is done by sticking a toothpick in the middle and checking to see if it comes out clean.
- Enjoy with more butter, duh :)
